Stuffed Bell Peppers

We had these for dinner last night and its kind of one of those recipes you remember from childhood and look at a few recipes for guidance. So here goes - this made 4 servings plus about a cup and a half of the meat mixture that was consumed on the side!


1 # ground beef
1 large onion chopped
4 bell peppers (we had assorted colors)
1 sweet potato - peeled, cubed and boil until tender (This was added because we needed to use it up ASAP!!)
1 jar of Pomodoro sauce (24 oz of tomato sauce)
3 servings of rice cooked ( ours was 3/4 c rice to 1 1/2 c water)
Mozzarella cheese to top

Trim tops of bell peppers and clean out inside ribs and seeds. SAVE tops and chop into 1/2 pieces.

I then put the bottoms of the bell peppers into a microwave safe dish filled each pepper halfway with water and microwaved on high for about 5-8 minutes until they were tender - discard water.

In meantime saute ground beef and onion and peppers until soft. I then added my cooked sweet potato chunks. Add sauce and rice. Combine all.

Ladle into each bell pepper - mounded. Top with mozzarella cheese. I put extra filling into oven safe dish and topped with cheese.

Bake @ 400 for 20 minutes!
