The Wilde Oscar a Bold St. Patricks Day Cocktail!

 A fun cocktail for St Patricks that uses GUINESS and we love bourbon (not Scotch fans) anf it was quick and easy and Delish!! Recipe from You-Tube. Bourbon 1 1/2 parts Guinness ( we happened to have 0% ABV) 1 part Simple Syrup 1/2 part Bitters 1 dash Stir over ice and then strain over a large cube!

 Fr om DELISH - this was a good recipe but it took a bit to prep and 'not sure that the juice was worth the squeeze' but it did get in a lot of green vegetables! From ALLRECIPES a spicy jambalaya with chicken, andouille sausage, rice, and Cajun seasonings that's easy to make in one pot. We made this for Fat Tuesday and Mardi Gras! We used chicken thighs. 2 tablespoons peanut oil, divided  1 tablespoon Cajun seasoning  10 ounces andouille sausage, sliced into rounds  1 pound boneless skinless chicken breasts, cut into 1 inch pieces  1 onion, diced  1 small green bell pepper, diced  2 ribs celery, diced  3 cloves garlic, minced  1 (16 ounce) can crushed Italian tomatoes  ½ teaspoon red pepper flakes  ½ teaspoon ground black pepper  1 teaspoon salt  ½ teaspoon hot pepper sauce  2 teaspoons Worcestershire sauce  1 teaspoon file powder  1 ¼ cups uncooked white rice  2 ½ cups chicken broth Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Aperol Old Fashioned

  From THEGANDMKITCHEN If you love the  Aperol Spritz and are a bourbon fan , then this  Aperol Old Fashioned is perfect for you ! This sweet and citrusy old bourbon cocktail combines  bourbon whiskey, Aperol, simple syrup, orange, and cherry bitters  to make the most delightful drink! SORRY no garnish items available! 1 1/2 ounce bourbon- preferably Angels Envy or other bourbon with orange notes 1/2 ounce Aperol  2 tsp simple syrup  2 dashes orange bitters 1 dash of spiced cherry bitters  Garnish maraschino cherry  And orange slice  Add ice to a rocks glass then top with bourbon, aperol, simple syrup, and bitters. Stir to combine the drink. Garnish with an orange wedge and maraschino cherries.

Chicken and Wild Rice Casserole

 Recipe from a Seasoned Mom- this was very popular when we lived in Minnesota. It was fabulous especially on a cold winters day! Italian Margarita

 This cocktail was so good we actually made it 2 nights in a row! Tajín, for rim (Didn't have it on hand) 2 ounces tequila blanco   1 ounce Aperol  1 ounce lime juice  1 ounce simple syrup  1/2 ounce orange juice orange slice, for garnish 1. Run an orange slice around the rim and dip the rim into the Tajín.  2. Fill a cocktailshaker with tequila blanco, Aperol, lime juice,simple syrup and orange juice. 3. Add ice and shake well until the mixture isthoroughly chilled, about 15 seconds.  4. Strain into a glass lled with fresh ice and garnish with an orange slice.
