Gwyneth Paltrows Chicken Milanese With Slow-Roasted Cherry Tomatoes and Arugula

I have to start by apologizing as the finished product is the only picture I have for this recipe. I had seen Joy Philbin on Rachael Rays 1000 show episode and she mentioned how fabulous it was and since Katie was coming out for dinner decided to try it out on her. I had no plan to blog it so didn't take pictures but it was so CRAZY GOOD that Katie took this one. Try it out it was over the top great!!  This recipe, from Gwyneth Paltrow, is a very basic and yummy chicken milanese, which is made special with the addition of the roasted cherry tomatoes and arugula salad. Arugula is like a super food. It's so healthy for you! The chicken couldn't be easier and the salad topping is such a nice complement. Simple and satisfying!
