Shrimp Langostino Étouffée

 F rom blogger TEASPOONOFSPICE - this was absolutely lovely with just a perfect amount of heat. We didn't have brown rice so used white rice. Also subbed red pepper for green bell pepper. Warm Langostino Lobster Rolls

 Fro m POOKSPANTRY.com a really nice and easy to make alternative to a cold mayo based salad. We will definitely do it again. Trader Joes Brioche Hot Dog Buns were perfect for this. Ingredients 12   ounces   langostino tails   thawed 1/2   tsp   salt 6   tbsp.   unsalted butter   softened 4   hot dog buns ( top split not side) 1   tbsp.   fresh chives   finely diced 1   tsp   lemon juice 1   tsp   capers   drained lemon wedges   for serving Instructions Drain thawed langostino tails well and pat dry with paper towels. Heat a large skillet over medium high heat. Using 2 tbsp. softened butter, butter each side of the rolls. Toast in pan until brown on each side, about 3 - 4 minutes. Set rolls aside to cool slightly. It was sooooo gooood I am making it again this week! 1 fillet sole  salt and pepper, to taste  1/4 cup all-purpose flour  3 eggs, lightly beaten  extra-virgin olive oil, for frying  1 clove garlic, minced  pinch of capers ( I used a couple of tablespoons) 1/2 cup white wine  2 tablespoons lemon juice (from 1 lemon)  1/4 cup chicken stock  6 tablespoons cold butter  fresh Italian parsley, chopped  lemon slice, for garnish FOR THE FISH:  1. Season the fish with salt and pepper.  2. Add flour and eggs to separate shallow bowls or rimmed plates.  3. Lightly coat the fish with flour, then dip the floured fish into the egg mixture.  4. Sicilian Grilled Swordfish

 We recently had a fabulous dinner at some friends and this recipe is from Ina Garten and will be my new swordfish go to - easy to make and soooo flavorful! She didn't serve it with the arugula but with sliced tomatoes and corn salad also an Ina recipe. ( see other post) 2 tablespoons freshly squeezed lemon juice  1/4 cup good olive oil  2 teaspoons minced fresh oregano leaves or 1 teaspoon dried oregano  Pinch of crushed red pepper flakes  Kosher salt and freshly ground black pepper  6 (1/2-inch-thick) swordfish steaks (5 to 6 ounces each)  4 ounces baby arugula  Grated zest of 1 lemon  Directions:  Light a charcoal grill or preheat a gas or stovetop grill until very hot.  For the sauce, whisk together the lemon juice, olive oil, oregano, red pepper flakes, 1 tablespoon salt, and 1 teaspoon black pepper. Autumn Apple Cider Bourbon Cocktail

 Saw this lovely fall cocktail on Instagram. Light and not to sweet. OK I didn't read through entire recipe and pour it into a rocks glass with a large cube. Still delicious! 4 oz Apple Cider 2.5 oz Bourbon 1 oz fresh Lemon Juice Lemon wedge  to rim glass 1/4 tsp ground cinnamon + more for the sugar cinnamon plate Maple Syrup, optional ( I didn't use) 2 T granulated sugar for rim plate Garnish with a Cinnamon stick or Rosemary sprig Rub lemon wedge around the martini glass until well coated - then dip edges in shallow plate of cinn-sugar. Pour apple cider, lemon juice, bourbon and ground cinnamon in a cocktail shaker full of ice. SHAKE vigorously to incorporate the cinnamon. Pour into martini glass and garnish with with cinnamon, rosemary and apple. 

Chocolate Cherry Mud Cake

 From Joy Bauer on the TODAY show. It's 3 ingredients and easy to make. Next time I would combine the sparkling water and cake mix in a bowl and pour over the frozen cherries. Awesome with a little whipped cream or ice cream! 4   cups   sweet pitted frozen cherries ▢ 1 ½   cups   chocolate boxed cake mix ▢ 1   cup   berry or cherry-flavored sparkling water Preheat your oven to 350°F. Lightly mist a 9×13-inch baking dish with nonstick spray. Spread the sweet, pitted cherries evenly across the bottom of the baking dish. There’s no need to thaw the frozen cherries – add to the pan straight from the freezer, breaking up any clumps. Sprinkle the chocolate cake mix (just 1.5 cups worth) evenly over the cherries. Then, pour the 1 cup sparkling water over the top and gently stir everything together in the dish until the cake mix is fully combined. It will take a few minutes to fully blend the mixture, and it will become nice and thick. Bake for about 50 minute...

Cowboy Caviar Bowl

 Joy B auer made this recipe on the TODAY show and it was healthy and lots of fiber and just delicious. we had it both plain and topped with chicken. This makes a single serving.
