Broccoli Screamer

Back when we lived in Minnesota a woman I worked  with named Barbara (she was a great chef!!) anyhow she told me how to make these broccoli screamers -- broccoli with scrambled eggs and cream cheese --yummy --quick to make--makes you feel healthy and a good use for leftover broccoli!!   Scrambled egg mixture ( I used about 1c plus of egg white mixture) Cooked broccoli in small pieces (used about 1/2 to 3/4 c leftovers) Cream Cheese (I used about 2 T of low fat cream cheese in small pieces) Non stick cooking spray In skillet spray nonstick cooking spray and over medium heat when pan is hot --add scrambled egg mixture --when it is almost totally cooked sprinkle the broccoli on top and fold into mixture to heat through - --add the bits of cream cheese at end and fold in --yummy! Great with bagel or toast!

Salmon Shephards Pie ala La Brogue Inn

Many years ago on a date night we went to the Old Brogue Inn in Great Falls VA -- we had a great night and enjoyed a fabulous Salmon Shephard Pie. Since then I have recreated it my way --yummy!! Sorry the picture has a real red hue to it --but it is fab Ingredients 6 potatoes -cleaned and scrubbed 1 leek sliced 1/2 c sauvignon blanc wine EVOO 8 oz pkg sliced mushrooms 1 onion chopped salmon fillets small  bunch of green onions sliced **fresh tarragon 1T chopped or 1 tsp dried** Start your potatoes boiling for mashed. In meantime in saute pan with 2 T EVOO --saute mushrooms until tender and lightly browned --put aside In same pan -saute your leeks as well til tender and also put aside Finally in same pan -saute your onions and salmon gently breaking your salmon up into small pieces after your turn it over Now add in your white wine and allow it to cook off about 1-2 min Layer into casserole the salmon/ onion mixture. Shrimp and Asparagus Risotto

Sometimes on a cold night its great to have a comfort meal --when trying to decide what to cook tonight I chatted with my sister Linda and she asked me if I had ever made a lemon risotto- - I got to thinking that I had all the ingredients for to make one and decided to add shrimp and asparagus to the basic recipe --you could make a lovely mushroom risotto if you had them on hand. The only thing I wished I had added was fresh lemon zest as I think it would have 'brightened' the flavor The main ingredient is Arborio Rice which is a high-starch, short-grained type of rice that is the traditional choice for making classic Italian risotto. Both Wegmans and Trader Joe's sell it. 12 oz Arborio Rice 4 cups heated stock (vegetable, chicken or beef) - I used vegetable as it was went best with the shrimp 1 chopped onion 1/2 T butter-- I used 3 T to saute both asparagus and onion parmesan cheese ( I grated about 1/2 cup+ ) 4 oz dry white wine ( I used Sauvignon Blanc) 1/4 cup...

While watching the Today Show a  few weeks back they showcased a really cool idea of Meatloaf Cupcakes. It looked absolutely yummy and very stylish. I checked out the website. Terry's NEW Crusted Chicken Baked Chicken

My friend and coworker Terry came into work raving about a crusted baked chicken that was so good her husband George thought it was take out. I think she said she saw it in a magazine --the trick to this is the drying time on the rack after it is 'crusted'  The night I made it my son's girlfriend Hanna was coming out and she is a pescatarian so I made her dinner with cod. It was yummy as well. I  would definitely serve it with a fruit salsa or sauce.  Also be sure to make sure that the frying pan you use can go in a 425 degree oven otherwise switch to a different dish. Sorry forgot to take a picture of it plated. The large fry pan is the chicken the small was the cod. Set up 2 dipping trays/bowls and a rack on top of a cookie sheet. First tray is 2 egg whites and about 1 T lemon juice and 2 t cornstarch Second tray is panko breadcrumbs and fresh parsley. Breanna's Famous Hostess Meatloaf -Just try it once you will be hooked!!

So it was at least a year ago I got a call from another foodie friend Breanna that had been at a Pampered Chef Hosts home the night before to do a cooking show and the host had this incredible meatloaf made up to feed her own family. Breanna begged for a bite and then the recipe. When she called me about it I told her I was not really a big meatloaf fan and could probably count on one hand the number of times I had made it over the last 30 years. I agreed to try and WOW --do yourself a huge favor and make this just once--you will be hooked. Also please note you can substitute ground turkey as well for the ground beef.
