Quinoa side dish

Was looking for a different side starch dish and lo and behold in my pantry was a COSTCO big bag of quinoa and a recipe on the back of the bag --an  nice healthy starch alternative as its 100% whole grain. Here's a quick Quinoa lesson --- Quinoa grains contain essential amino acids like lysine and good quantities of calcium, phosphorus, and iron.Quinoa grains are in general cooked the same way as rice keen-wa and can be used in a wide range of dishes. It is pronounced   1T Vegetable oil 1/2 c chopped onion 2 carrots, peeled and chopped 1 c quinoa , RINSED 2 c vegetable broth 1/4 c fresh parsley,chopped 2/3 c chopped walnuts- I didn't use them In oil -saute the onion about 5 min til translucent, then add carrot and saute 3 more min Add in quinoa--cool shot huh with it pouring through the air!! Karens Turkey Parm Burgers

My Katie had made this recipe earlier and RAVED about it --she got it from her friend Karen's blog --you can see her version and the read her food blog at http://hungrymom-ontherun.blogspot.com/   Actually definitely look at Karen's as she served hers on ciabatta rolls --yum!! I used the low calorie sandwich thins! Anyhow this was soooo good couldn't wait for the leftovers!!!   1 lb ground turkey (from Traders the ground turkey that says its for burgers- there were 4 types!) Italian Seasoned Bread Crumbs Italian Seasoning Jarred or canned Marinara Rolls (Karen used Trader Joe's Take and Bake Ciabatta) slices of mozzarella bunch of BASIL For the Aioli... basil, lemon juice, mayo, EVOO Mix a 3-4 tablespoons of marinara into your ground turkey in a bowl with 1-2 tsp italian seasoning. Pepperoni Calzone

This recipe for Pepperoni Calzone came from a friend of my mom's Mary Kostic --we have made it for years and it is so quick and easy to assemble - as mu Mom would say it is definitely a great appetizer for men with the pepperoni --on this day we made it hours ahead and kept it in the fridge til we were ready to cook it --and oh YES it is very good cold the next morning!!  1/2 pound  pepperoni slices  1 1/2  cups  mozzarella cheese -- shredded   garlic powder   oregano Roll out dough (thin). We put it onto saran plastic wrap so that I could roll it up and then put in fridge til ready to bake.   Spread with layer of pepperoni, mozzarella, garlic powder,  and oregano. OK now roll it up lengthwise into a long log-- I then wrapped it in saran and into fridge Bake on cookie sheet or stone.  Bake 350. Pork Tenderloin French Dips was a recipe shown on the Rachael Ray show--she told her audience that her test kitchen loved it so much and kept raving about it--I have to agree with them --it was fabulous easy and we will definitely be making it again. I think the recipe was really for only one of the pork tenderloins in i the package but cooked 2 with the intent to send Daniel home with leftovers! We served him this the night he got back from Denmark--he appeared to love it as he ate a second 'sub' as well!! Smoked Salmon Appetizer on a Chip!!!

Saw this in a magazine and knew my Kate would love it--had already given her the recipe so just put it together as I remembered when she was coming out to dinner--the original recipe called for sprig of dill --she is not a huge dill fan so topped with a little chopped red onion and capers on some! YUMMY!! Bag of Sturdy potato chips (yes note they are reduced guilt!!) Quick Shrimp Chowder

This recipe is from the June 2011 Cooking Lig ht. It was very good and a nice change for all the cool wet weather we are currently having. When I make it again--will do with the fresh herbs - I didn't have them on hand. Also can kick it up with a little Tabasco hot sauce or would top with some fresh slice green onions for garnish. All in all a simple and easy recipe. 2 cups organic vegetable broth 2 teaspoons minced fresh thyme ( I only had dried so used 1 tsp) 1/2 teaspoon freshly ground black pepper 1 tablespoon olive oil 1/2 cup prechopped carrot 1/2 cup prechopped onion 1/4 cup prechopped celery 2 tablespoons all-purpose flour 1 pound medium peeled and deveined shrimp ( I cut them in half and the pieces were fine) 1/3 cup heavy whipping cream (ok so used fat free half & half) Pour broth into a 2-cup glass measure.
