Carroll Shelbys Chicken Chili

I have been making this recipe for years--originally it came as an insert inside the Shelby's Chili mix--this time in an effort to make it even healthier I added a can of red kidney beans and a can of white navy beans. Also as always topped with cheddar and a dollop of sour cream. 1 cup  Onions,Raw,Chopped 2 tablespoons  Butter 14 ounces  Chicken Broth,Canned,Prepared 4 cups  Chicken, cooked, chopped 12 ounces  Corn,Sweet,Canned,Whole Kernel 1 can dark red beans, rinsed and drained 8 ounces  Tomato Sauce 1 cup  Water 1 Pkg  Carroll  Shelbys  Chili Mix SAUTE ONIONS IN BUTTER IN 5 QT PAN. **RESERVE 1/3 C CHICKEN BROTH** ADD ALL REMAINING INGREDIENTS EXCEPT MASA FLOUR AND CAYENNE PEPPER PACKETS. BRING TO BOIL; REDUCE HEAT SIMMER 30 MIN COVERED. GRADUALLY ADD RESERVED CHICKEN BROTH TO MASA  FLOUR STIRRING TIL WELL BLENDED. ADD TO CHILI MIXTURE CONTINUE TO SIMMER 15 MIN. Roasted Tomato Soup

What do you do when you have 2# of tomatoes that need to be used by tomorrow - you make delicious Roasted Tomato Soup with recipe from Food Networks Tyler Florence. Only changes I made was substituting red onion because that's all I had on hand and used fat free half and half. 2 1/2 pounds fresh tomatoes (mix of fresh heirlooms, cherry, vine and plum tomatoes ) 6 cloves garlic , peeled 2 small yellow onions, sliced Vine cherry tomatoes for garnish, optional 1/2 cup extra-virgin olive oil Salt and freshly ground black pepper 1 quart chicken stock 2 bay leaves 4 tablespoons butter 1/2 cup chopped fresh basil leaves, optional 3/4 cup heavy cream, optional   Preheat oven to 450 degrees F. Wash, core and cut the tomatoes into halves. Spread the tomatoes, garlic cloves and onions onto a baking tray. Wegmans Braised Hunter-Style Chicken

On a cool fall evening I found this recipe in Wegman's new fall MENU magazine --it was delish and realized I forgot to top with the tarragon which would have made it even better! Served it with the sautéed spinach as suggested. I also kicked up the veggies using 2 onions and 4 ribs celery and 4 carrots all coarsely chopped.
