White Chili

This was a quick and easy recipe to assemble and most of the ingredients were in my pantry and fridge --would be a great football game recipe 2 tsp EVOO 1 1/2 cups   chopped onion (about 1 large)   3  garlic cloves, minced 2 cups   fat-free, less-sodium chicken broth   5 teaspoons   green hot pepper sauce (such as Tabasco)   1/2 teaspoon   kosher salt 1 1/4 pounds   skinless, boneless chicken breast halves   2 tablespoons   stone-ground cornmeal 1  (19-ounce) can cannellini beans or other white beans, rinsed and drained 1/2 cup   plain fat-free yogurt   2 tablespoons   thinly sliced green onions (about 1)   Lime wedges (optional)     Heat oil in a Dutch oven over medium heat. Being of german descent decided a nice Sauerbraten dinner would be a great cold weather meal--this takes a little planning in advance as you marinate the beef for days before cooking--it is well worth the wait though and sooooo yummy! Don't be thrown off by the long ingredient list it comes together really fast. 1 3 1/2- to 4-pound beef round roast, brought to room temperature Vegetable oil, to coat Salt and pepper  or  Montreal seasoning For the Brine: 2 1/2 cups water 2 cups cider vinegar 1 cup cloudy cider 1 large carrot, peeled and thickly sliced on an angle 1 onion, peeled and quartered with root end left attached 2 to 3 ribs celery, thickly sliced on an angle In a tea filter sack, coffee filter or cheesecloth, bundle together: 2 large bay leaves 4 whole cloves 1 tablespoon Juniper berries (you can find them in the spice aisle) 1 1/2 teaspoons, half a palmful, mustard seed About 1 1/2 teaspoons coriander seed About 1 1/2 teaspoons dill seed ...

No I did not misspell it!! OK so this is a 'looser' ?sp version of Bertucci's recipe -- I have decreased the ingredient amounts as party of 2 does not need 1 GALLON of soup which is what the original recipe made--also the original is a soup and my soup recipes always become stoup!!  1 small  onion -- diced  3 Italian sausage links-- remove skin, small pieces   4 cups  chicken broth   1 cups  acini de pepe   1 can  chunky Italian tomatoes -- not drained (or about 1 cup I had leftover)    1/4 pound  spinach -- (1 pkg) torn up      2/3 cup  fresh  mozzarella Break up sausages into 1/2 inch pieces and put them into a large soup pot (2 gallon) along with the diced onion with a little EVOO.   Saute the sausage and onion over low heat until the sausages are golden.  Be careful not to burn the onion. Baked Blueberry and Banana Oatmeal

OK so as most of my meals begin --it was a case of - holy cow these bananas are going to go bad and what can I make with all these blueberries . The search for a recipe with these fruits and oatmeal began-- plus like most of us am trying to be conscious when it comes to our cholesterol! This was awesome and definitely a do-again recipe!! 1 cup rolled oats 1/4 cup walnuts, chopped and lightly toasted 1/2 teaspoon baking powder 3/4 teaspoon ground cinnamon Pinch of salt 1/4 cup maple syrup, plus more for serving 1 cup milk 1 large egg 2 tablespoons unsalted butter, melted and cooled slightly 1 teaspoon vanilla extract 2 ripe bananas, sliced into 1/2-inch thick pieces 3/4 cup fresh blueberries   Preheat oven to 375 degrees. 2.
