Banana Bread Cookies (Soft-Baked with Chocolate Chips)

 F rom the Today show's Joy Bauer - it is a fun healthy cookie alternative to the traditional muffins. ▢  3   large very ripe bananas ,  mashed ▢  ⅓   cup   packed light brown sugar ▢  1   tablespoon   neutral oil ,  avocado, canola, or grapeseed ▢  2   large eggs ,  lightly beaten ▢  1   teaspoon   vanilla extract ▢  1 ½   cups   white whole wheat flour ,  see notes for alternative flours ▢  ½   cup   old-fashioned rolled oats ▢  1   teaspoon   baking soda ▢  ¼   teaspoon   fine salt ▢  ½   cup   chocolate chips ,  semi-sweet or dark ▢  ½   cup   chopped pecans or walnuts ,  optional Preheat & prep.  Preheat your oven to 350°F and line a baking sheet with parchment paper. OK you can see that despite reaching internal temp of 170 and resting for 15 minutes it was a little soggier than I had wanted it. Tasted ok - perhaps leftovers will be firmer. Portobello Mushrooms with Brioche and Poached Egg- GUEST BLOG

 M y sister-in-law Andrea made this delicious breakfast. 14 oz portobello mushroom, sliced 1/2" thick  5 T olive oil  2 garlic cloves, crushed  1/2 tsp ground cinnamon  1/4 basil leaves, torn (she used parsley) 1/8 tsp chili flakes, plus extra to serve  4 slices brioche, cut 3/4" thick  4 large eggs  1/2 c sour cream plus 2 T to serve Flaked sea salt and black pepper  1.Preheat the oven to 450ºF fan.  2. Mix the mushrooms with 3 tbsp of oil, 1 garlic cloves, 1/4 tsp cinnamon, 1/2 tsp of flakes salt and good grind of pepper.  3. Spread out on a large parchment paper and roast for 15 minutes, stirring halfway, until soft and starting to brown. Toss with the basil and set aside.  4. While the mushrooms are in the oven, mix together the remaining 2 tbsp of oil with remaining 1/4 tsp of cinnamon, 1 garlic clove, the chili flakes and 1/4 tsp of flakey salt.  5.  This recipe is from Mantitlement and was absolutely delicious. 6  slices bacon, diced 1 cup  diced onion 3 cups  diced russet potatoes  (about  2  large or  3  medium sized potatoes) 1 – 2  tablespoons garlic 1/2 teaspoon  kosher salt 1/4 cup  flour 8 ounces  clam juice  (see note) 1 cup  chicken stock  (can substitute seafood stock if you like) 1 cup  whole milk 1  –  1 1/2  cups heavy cream  (start with  1 cup  and then add more if desired) 3  cans (6.5 ounce each) chopped clams, rinsed and drained  (see note) 1 tablespoon  fresh thyme, chopped  (or  1 teaspoon  dried thyme) Fresh black pepper to taste Parsley for garnish  (optional) Instructions Cook the bacon in a large soup pot until crisp. Fig Boursin Dip Recipe

This easy recipe is made with creamy Boursin cheese, sweet fig jam, and salted pistachios for a tasty crunch. Top with hot honey and sea salt for an unreal flavor profile. This is a halved batch. (2) 5.2oz Boursin cheese wheels 3/4 cup  salted pistachios, roughly chopped 3/4 cup  fig jam 2 tbsp  hot honey flaky sea salt crackers for dipping Toast pistachios over medium heat until fragrant but not burning, about 2-3 minutes.  In a wide based serving dish, spread two Boursin cheese wheels along the bottom. Top with fig jam and spread, then add pistachios.  Drizzle on hot honey and top with flakey sea salt. Serve with your favorite crackers or bread.

This recipe did not disappoint-yum! 1   deep dish pie shell ,  (16 oz) ▢ 1   cup   diced chicken ▢ 2   cups   fresh spinach ▢ ¼   cup   sun dried tomatoes ,  diced ▢ 2   green onions ,  thinly sliced ▢ ½   cup   shredded mozzarella cheese ▢ ¼   cup   grated parmesan cheese ▢ 6   large eggs 1/2   cup   heavy cream ▢ 1/2   cup   milk 1/4 tsp salt 1/4 tsp black pepper Pre-bake the pie crust: Heat the oven to 400˚F. Place parchment in the crust and fill it with dried beans. Bake for 12-15 minutes or until golden brown. Remove from oven and allow to cool to room temperature. Reduce oven temperature to 350˚F. Note: do not poke holes in the crust. This can allow the egg to leak through if the holes do not completely close during baking. Weighting the crust with beans should prevent the crust from ...
