Gilchrist's Macaroons Recipe Boston, MA

 So this is a definite childhood memory! My Grammy used to take the "T" into Boston and Buy these from Gilchrist's and then she would arrive at our house with the famous white box tied with string with these big cookies each individually wrapped in wax paper bags! Gilchrist's opened in Boston in 1842 and, by 1964, there were multiple store locations across Greater BostonGilchrist's building is still standing, although the store itself closed in 1977 This recipe is from a blogger oldenewenglandrecipes.blogspot.com I remember them being a lot puffier but the flavor was still good. 



1/2 lb or 1 cup almond paste ( I grated mine as it came in a tube)

1 cup conf. sugar

3 egg whites

pinch salt

1/2 tsp vanilla

granulated sugar

Work paste and sugar with fingers until blended ( I did this with a rubber spatula)

Add egg whites one at a time and salt & vanilla.

Put thru pastry bag with plain end on parchment paper well spaced.  ( I used a 2T scoop)

Sprinkle with sugar, bake 20 min 300 degrees.  

Remove sheet of paper and place on damp cloth.  

Makes about 3 doz.- HAH I got a dozen as I wanted the big ones I remembered.

    1. My mother took my brother and I downtown a lot. I remember especially seeing Santa at Jordan Marsh and going across the street to Gilchrist's for those macaroons! YUM!!!
