Caramelized Pineapple Old Fashioned

 From Fogo de Chao Brazilian Steakhouse shared by a friend Ann who made it over the weekend! The only thing we changed was not adding more sugar and strain with a fine mesh strainer so it wouldn't be as cloudy.


  1. Sugar in the Raw, Demerera 
  2. Fresh Pineapple Cubed 1/2" thick
  3. Orange
  4. Luxardo cherries
  5. Rye Whiskey

  1. Place pineapple cubes on a baking sheet and sprinkle with sugar.
  2. Brown with a torch or under the broiler until golden brown.
  3. Add 3 pineapple cubes to cocktail shaker.
  4. Add 1/2 oz sugar*, orange slice, and cherry to shaker. (*we skipped the added sugar)
  5. Muddle the ingredients well.
  6. Add 2 oz whiskey and 1/2 oz water to shaker and fill with ice.
  7. Shake well in order to dissolve the sugar.
  8. Skewer another cherry and pineapple cube as a garnish.
  9. Strain drink into glass - use a fine mesh strainer
