Bacon Tomato Cups
My friend Karen was coming over for a glass of wine and talk about doing cooking shows so I thought I would bring back an old cooking show favorite recipe that guests have repeatedly asked about for her to sample that night, so I thought I would share it with you as well. This is a very easy recipe that is perfect for entertaining. This recipe features our Deluxe Mini-Muffin Pan. If you don't have one, get one, as a matter of fact, you should have two. They can fit side by side in your oven and double the recipe and you will have 48 delicious little morsels done at once!!
BACON TOMATO CUPS
1 pkg. of refrigerated flaky biscuits NOTE- I mistakenly bought Jumbo--buy the reg size
8 slices of bacon, crisply cooked - I used turkey bacon --cooked on my bar pan @425 for 20 min crisp without the mess--then drain on paper towel
1 med. tomato, seeded
1/2 small onion
4 oz. Swiss cheese - I used the preshredded Giant brand
1/2 cup mayo
1 tsp. basil --fresh about 4 leaves julienned with scissors
Preheat oven to 350.
Chop bacon, onion and tomato with Food Chopper and place in bowl.
NOTE the really cool MACRO shot below-- Karen showed me how to do that!!
Place one layer of biscuit (1/3rd of each biscuit) over each muffin section and press down with MiniTart Shaper.** This is really the perfect product to do this --true story when I attended a cooking show over 10 years ago the consultant Breanna tried to sell it to me with my minimuffin pan --but I thought why spend the $4 figured I could use a shot glass instead --it doesn't work --too big --spend the $ and get the RIGHT TOOL!!**
NOTE Keep biscuits in fridge until you are ready to do this otherwise they get sticky. Used a little flour that night as dough was sticky --note with the right size biscuit it would fit pan better.
Using Small Stainless Steel Scoop, place one scoop ( approx 1T) into each biscuit.
Bake for 10 min. or until biscuits are golden brown.
These appetizers are delicious and quick, but they will make your guests think you spent your whole afternoon preparing them!!
