Tuna Orzo Salad --KATE's request!
This is one of those 'staple' lunches for the lake. It came from my Minnesotan next door neighbor Sue -- I have made it for so many years now that I am not sure how close to the original it is -- I can almost bet the frozen peas were Green Giant brand as her husband Scott worked for them! Katie's always asking for this and we just had it for her 23rd birthday lunch. Sorry no as you go pics just completed as I remembered to take photos as we served. See the pic below is actually on the boat (goes great with chips and doritos -per the girls)

1 c dry orzo cooked and rinsed in cold water
2-3 cans tuna in water -drained
1 c frozen peas or more :) (they defrost when mixed in)
1 onion chopped
3 ribs celery finely chopped

mix together - salt and pepper --I usually don't measure that much --just wing-it
This was a triple batch and it only had a little leftover!!
