Angel Hair Pasta Salad

OK so the story behind this is back in my ER days at Fair Oaks Hospital on one warm sunny Saturday AM a patient of mine came in with a laceration from a knife making this salad --she was so nice and it sounded so easy that she wrote it down for me on a paper towel!! We have done a few changes over the years--see below-- but the best part is you can have all the ingreds in your pantry --just need fresh green onions/scallions and if you have fresh parsley great as well. It is one of Katie's favorites and always a quick easy recipe for potlucks at work!

ANGEL HAIR PASTA SALAD



1 pound CAPELLINI BOXED -- great with whole wheat pasta as well
1 PKG GOOD SEASONS ITALIAN DRESSING -- MAKE AS DIRECTED ** we make it with the balsamic vinegar -great taste but it will appear a darker salad --on this night in these photos made it with white balsamic vinegar (from TJ's)
1 cup mayonnaise
1 teaspoon mustard (always Guldens for us)
4 scallions -- chopped fine
1 cup parsley -- FRESH CHOPPED or about 1/3 c dry parsley
1/2 cup Parmesan cheese -- FRESH GRATED -love the new TJ's shredded parm



COOK PASTA ACCORDING TO PKG DIRECTIONS & RINSE UNDER COLD WATER

MIX WITH REST OF INGREDS AND CHILL


BEST MADE A DAY AHEAD
