Pineapple Rum Slushie

 Decided to try this from The Good Dish - its was a nice light beverage perfect for summer weather. Kevin loved it - I found it a little too minty for my taste. I was drinking mine through a straw initially as the drink separated but Kevin loved drinking it from glass as you tasted both layers!


6 ounces Pineapple juice 

4 ounces Gold rum 

2 ounces Simple syrup 

2 ounces Fresh lime juice 

8 Mint leaves 

2 cups Ice cubes 

1 cup Frozen pineapple chunks 

Pineapple wedges, for garnish

Mint sprigs, for garnish 

 

Combine the pineapple juice, rum, simple syrup, lime juice, and mint leaves in a blender carafe first, then top with the ice cubes and frozen pineapple. 

Blend until very smooth. Pour into two tall glasses. 

Garnish with pineapple wedges and mint sprigs. 

Serve with straws. Servings 2
