Haddock Italian Style
Another attempt at a very simple recipe styled like the meals we ate in Italy. Simple fresh ingredients and a quick meal to prepare
2 servings of fresh Haddock or flaky white fish
EVOO
Salt Pepper
1 pint of mixed grape tomatoes or heirloom - slice in half if too large
Black Pitted olives -sliced in half (preferably Italian or Mediterranean)
1 onion sliced in thin slivers
Fresh Parsley for garnish
In oven safe pan -layer all your tomatoes and onions and olives -Roast in oven 425 for about 20 minutes
At the same time pat fish dry and drizzle with EVOO and salt and pepper and into oven as well ( I probably could have done the fish in the same pan as well but didnt want to overcook it in case vegetables took longer)
Place fish on plate--top with roasted vegetables and garnish with fresh parsley
