Terry's NEW Crusted Chicken Baked Chicken
My friend and coworker Terry came into work raving about a crusted baked chicken that was so good her husband George thought it was take out. I think she said she saw it in a magazine --the trick to this is the drying time on the rack after it is 'crusted' The night I made it my son's girlfriend Hanna was coming out and she is a pescatarian so I made her dinner with cod. It was yummy as well. I would definitely serve it with a fruit salsa or sauce. Also be sure to make sure that the frying pan you use can go in a 425 degree oven otherwise switch to a different dish. Sorry forgot to take a picture of it plated. The large fry pan is the chicken the small was the cod.
Set up 2 dipping trays/bowls and a rack on top of a cookie sheet.
First tray is 2 egg whites and about 1 T lemon juice and 2 t cornstarch
Second tray is panko breadcrumbs and fresh parsley.
Dip chicken or fish into liquid first then the bread crumb mixture then place on rack to 'dry out' for 20-30 min

Next heat a little EVOO in fry pan - just before you place it into oil pat a little bit more breadcrumbs onto top and place that side down in pan then pat more breadcrumbs onto the 'new top'

--allow to brown and flip then brown the second side

Then place in 425 degree oven for about 15-20 minutes--it was yummy and crispy and lower in fat!!
