Gramigna* with Sausage Ragu

Gramigna* with Sausage Ragu Today Show December 27th

So both Katie and I saw this recipe demo'd last week and thought yummy --it was delicious and great as leftovers as well.


Before I start the recipe here is a great hint -- often times like in this recipe you do not need the whole can of tomato paste - so blop  out the remainder of the can onto plastic wrap in 1 T (approximate it) blops--then twist in between--see 2ndpicture then place in quart ziploc and throw into your freezer--don't forget to label the bag



OK NOW THE RECIPE :)
  • 1 to 1 1/2 pounds Italian sausage, crumbled
  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 6 tablespoons Italian parsley, minced
  • 1 small carrot, chopped
  • 1 large clove of garlic, minced
  • Pinch of cloves
  • 1 tablespoon tomato paste
  • 1 cup dry white wine
  • 1 15.5-ounce can of tomatoes
  • Salt and pepper

  • 1 cup Parmigiano cheese, grated
Bring a large pot of salted water to boil. Stir in the pasta and cook according to the directions on the package.
WAIT DON'T DO THIS STEP UNTIL YOU ARE AT FINAL STEP FOR RAGU SIMMERING ...or your pasta will be done and hanging out waiting for sauce


START HERE....In a medium saute pan, brown the crumbled sausage over medium-high heat, stirring often.

Remove to a bowl and set aside.
Remove all but 1 tablespoon of excess drippings from pan;

add the olive oil, onion, carrot and parsley

cook until golden brown.

Return the browned sausage to pan, add minced garlic and cook for another 2 minutes.


Add cloves, tomato paste and half of the white wine.

Simmer until wine has evaporated; about 8 to 10 minutes
.
Add the remaining wine and tomatoes. Simmer for another 30 minutes.

Season with salt and pepper.
When the pasta is cooked until al dente, drain and toss with the sausage ragu.Start your pasta after the ragu mixture has been simmering 15 min or so
Top with Parmigiano cheese and serve.
Serves 6
