Potato Broccoli Chowder OR What to do with those leftover mashed...
So its after the holidays and your fridge has multiple leftovers and you are wondering what to do with leftover mashed potatoes--sick of just heating them up...so time for a Potato Broccoli Chowder....

INGREDIENTS:
3+ cups of leftover mashed potatoes
32 oz carton or 4 cups of chicken broth
16 oz bag of frozen broccoli (or you could use leftover 2-3 cups broccoli
1 large onion -chopped *oops sorry not pictured below*
Salt and pepper
Garnish with shredded cheddar and green onions sliced
In large stock pot --add the 32 oz chicken broth and the frozen broccoli
And oh yeah remembered the onions -one large chopped --bring to a boil and simmer for 10 minutes until the vegetables are soft.
Then using a handstick blender - puree the vegetables--I like to leave a little of the broccoli still intact in small pieces.
Now add in your leftover pics -- and stir until the potatoes are mixed in well and heat through if necessary
Don't salt and pepper until you taste it as the potatoes were most likely already seasoned. Garnish with cheddar and green scallions. Yummy!!
