Broccoli Screamer
Back when we lived in Minnesota a woman I worked with named Barbara (she was a great chef!!) anyhow she told me how to make these broccoli screamers -- broccoli with scrambled eggs and cream cheese --yummy --quick to make--makes you feel healthy and a good use for leftover broccoli!!

Scrambled egg mixture ( I used about 1c plus of egg white mixture)
Cooked broccoli in small pieces (used about 1/2 to 3/4 c leftovers)
Cream Cheese (I used about 2 T of low fat cream cheese in small pieces)
Non stick cooking spray
In skillet spray nonstick cooking spray and over medium heat when pan is hot --add scrambled egg mixture --when it is almost totally cooked sprinkle the broccoli on top and fold into mixture to heat through - --add the bits of cream cheese at end and fold in --yummy! Great with bagel or toast!
