Salmon Shephards Pie ala La Brogue Inn
Many years ago on a date night we went to the Old Brogue Inn in Great Falls VA -- we had a great night and enjoyed a fabulous Salmon Shephard Pie. Since then I have recreated it my way --yummy!! Sorry the picture has a real red hue to it --but it is fab

Ingredients
6 potatoes -cleaned and scrubbed
1 leek sliced
1/2 c sauvignon blanc wine
EVOO
8 oz pkg sliced mushrooms
1 onion chopped
salmon fillets
small bunch of green onions sliced
**fresh tarragon 1T chopped or 1 tsp dried**
Start your potatoes boiling for mashed. In meantime in saute pan with 2 T EVOO --saute mushrooms until tender and lightly browned --put aside
In same pan -saute your leeks as well til tender and also put aside
Finally in same pan -saute your onions and salmon
gently breaking your salmon up into small pieces after your turn it over
Now add in your white wine and allow it to cook off about 1-2 min
Layer into casserole the salmon/ onion mixture. Oops forgot to put it into my ingreds list pic but sprinkled about 1 tsp tarragon (or Fresh Tarragon would have been better)
Then layer your sautéed mushrooms over salmon mixture
Top that with 1/2 your green onions sliced (about 1/2 cup)
Make up your mashed with butter and milk --add in sautéed leeks and rest of green onions
Layer mashed potatoes over top onto casserole --I usually just use spray butter on top along with paprika so that when I bake it top gets golden brown
Bake at 425 for abut 20 min
