Sweet Potato Pancakes with WOLFFS APPLE HOUSE compote.

 I was given Rosella's Sweet Potato Pancake mix as a gift and when I went to their website their was a "recipe" for the above except there was no recipe! So I still wanted to try to make a similiar recipe. Found this apple compote recipe and made it up to warm and use as a topping on my sweet potato pancakes this weekend. OK second picture is with it over the sweet potato pancakes- yum!



  • 1 lb. apples, peeled, cored and chopped
  • 1/8 cup raisins (didn't ahve on hand and Kevin is not a fan anyhow)
  • 3 tablespoons brown sugar
  • 3 tablespoons water
  • 2 tablespoons lemon juice
  • 1/8 teaspoon cardamom or cinnamon
  • a pinch of salt
Meanwhile, combine all compote ingredients in a large saucepan. Bring to a boil. Reduce heat to medium low and simmer about 20 minutes until apples can be easily mashed. Mash them slightly, so that they soften but some of the shapes are distinct. Set aside for topping pancakes.
