Cowboy Caviar Bowl
Joy Bauer made this recipe on the TODAY show and it was healthy and lots of fiber and just delicious. we had it both plain and topped with chicken. This makes a single serving. If you use a can of each of the beans just triple the recipe.
- ½ cup canned black-eyed peas, rinsed and drained
- ½ cup canned black beans, rinsed and drained
- ½ cup sweet yellow corn
- ½ tomato, chopped
- 2 tablespoons red onion, finely diced
- 2 tablespoons red or orange bell pepper, finely diced
- 2 to 4 tablespoons fresh cilantro, minced
- Crumbled feta cheese or cubed chicken, optional
- DRESSING
- 1 tablespoon lime juice
- 2 teaspoons extra virgin olive oil
- ⅛ to ¼ teaspoon kosher salt
- Pinch ground cumin and chili powder, optional
- Arrange everything (except dressing) in decorative piles in a one-serving bowl. Drizzle dressing ingredients over the top and mix to combine. Serve immediately or chill in fridge to let the flavors mingle together.
- Top with Chicken or feta cheese if desired.
