Edamame with Soy and Sesame Sauce

From BLOGGER PICKLED PLUM. These are fun appetizer. A nutty and savory snack of edamame pods lightly fried in toasted sesame oil and tossed in soy sauce. Just made it again 2nd time in 1 week! So good and good for you!


1 1/4 cup edamame in pods 
2 tablespoon toasted sesame oil 
1 teaspoon soy sauce 
Salt and pepper to taste 

Boil edamame for 3 to 4 minutes. Drain in cold water and dry with paper towel. 

In a skillet over medium high heat, add the sesame oil and swirl to coat the surface. 

When the oil is hot, almost smoking, add the edamame pods and fry for about 2 to 3 minutes, until the pods are slightly charred. 

Add the soy sauce and quickly stir until the sauce has evaporated. 

Season with salt and ground black pepper.

Serve immediately or save it for later in the fridge. It’s good hot and cold! BUT WHO IS KIDDING WHOM - KEVIN AND I POLISHED A BATCH OFF IN MINUTES!
