Roast Potatoes - a fun new way!

This was another photo on pinterest.com --looked like a really great variation--the crust was AWESOME!!

4 simple ingreds- red bliss/ EVOO/Salt and Pepper

Boil red skin potaotes for 15 min -allow to cool slightly

Mash them down slightly -used a masher--may just try with a fork or back of a spoon next time
 Drizzle with EVOO salt and pepper -bake 425 for about 20-30 min until golden

Yes these were fab--the guys thought a little dry --may drizzle with a little more EVOO mid way through cooking next time.
