Cake Balls for the Birthday Girl!
Need to start out this by identifying my pretty baby Kathryn on her 24th birthday!! We spent it with a group of her friends at the lake for the celebration--it has always been tradition that my kids get to choose their meals and dessert for their special day. As you already saw Daniel got the special Oreo's baked in Chocolate Chip cookies for his. The huge confession I need to make is that although I provided the ingredients (that's good right??) Kate's friends Laura and Mel made and assembled the cake balls! Thanks girls --so they are pictured below.
Now cake balls have been the RAGE among the 20 somethings crowd for a bit--there are many variations --virtually limitless --any combo you can think of --One of my coworkers Chrissy made fabulous strawberry cake mixed with cream cheese frosting -dipped in white chocolate and then sprinkled with strawberry pop rocks--they were a huge hit.
Prepare the cake mix according to package directions using any of the recommended pan sizes.
When cake is done, crumble while warm -for simplicity we crumbled right in the pan with forks
Now here is Laura stirring in the frosting until well blended. Then pop the whole thing onto the freezer to make it easier to make into balls
Look how happy Laura and Mel are making the cake balls with their hands --you could also use a melon baller --you really want to keep them smaller than a golf ball - you can also use small kebob sticks at this point for dipping and serving
Next they dipped and rolled them in melted chocolate. We chose to sprinkle some with pop rocks --chill in fridge or freezer before serving!
Note to self next time -do not serve on black plate as it doesn't show up as well!
