Smoked Salmon Appetizer on a Chip!!!

Saw this in a magazine and knew my Kate would love it--had already given her the recipe so just put it together as I remembered when she was coming out to dinner--the original recipe called for sprig of dill --she is not a huge dill fan so topped with a little chopped red onion and capers on some! YUMMY!!

Bag of Sturdy potato chips (yes note they are reduced guilt!!)

Small package of smoked salmon--this is from TJ's and the pieces which is perfect
Creme Fraiche --or sour cream would also be great
Capers
Fresh Dill
Red Onion chopped fine

Check out these really cool sampling spoons got them years ago and wanted to use them for something --you could just set up the chips on a plate .....
OK here are the chips on the spoons....

Loaded up my east accent decorator with the creme fraiche (or small dollop sour cream onto chip)

Now add a small piece of smoked salmon onto the sour cream

Garnish with a sprig of dill was the way it was presented in the magazine recipe

We topped most of ours with capers and then grated red onion on top as well

It was very simple to assemble and a lot like your favorite bagel as an app!
