Karens Turkey Parm Burgers

My Katie had made this recipe earlier and RAVED about it --she got it from her friend Karen's blog --you can see her version and the read her food blog at http://hungrymom-ontherun.blogspot.com/  Actually definitely look at Karen's as she served hers on ciabatta rolls --yum!! I used the low calorie sandwich thins!

Anyhow this was soooo good couldn't wait for the leftovers!!!
 
1 lb ground turkey (from Traders the ground turkey that says its for burgers- there were 4 types!)
Italian Seasoned Bread Crumbs
Italian Seasoning
Jarred or canned Marinara
Rolls (Karen used Trader Joe's Take and Bake Ciabatta)
slices of mozzarella
bunch of BASIL

For the Aioli... basil, lemon juice, mayo, EVOO


Mix a 3-4 tablespoons of marinara into your ground turkey in a bowl with 1-2 tsp italian seasoning.

I know it looks weird but it will taste delicious -also dont over mix and it seems really moist that is ok

Shape into patties and stick it in the freezer for 15 min to let them firm up --otherwise too gluey auntie la!!Note I have saran on platter so it is easy to reuse on next step.

Then you throw together the aioli -it is really easy to do and great with other things like steamed artichokes or mahi-mahi burgers
Simply mix a few tablespoons of mayo, a touch of olive oil (les than a tsp), a handful of basil and the juice from one lemon (about 1 T)  in the blender or food processor
It will look like this....
Take out the burgers and pat italian bread crumbs on both sides. Pat the bread crumbs down well so they don't shake off -put them back into the freezer for another 10 minutes or so --note I put saran down on my platter so that after they are cooked they can go right back on platter.

OK so now the next set of directions were...heat your skillet to medium high heat with a thin layer of olive oil.
Sear burgers on both sides and pan fry until cooked through - about 5 min per side or so.

I wanted to save calories and the weather was great so wanted to grill them -sounded like a good idea...
OK so they were cooking on the outside but not the inside so we pulled then off and microwaved them a minute on high--added the slice of cheese and another 30 secs on high-worked perfect!
*** unlike with beef burgers you can not have the turkey burger medium or rare - it must be cooked through to no pink!***

Now assemble ..top your burger with slice of mozarella cheese... basil aoili on the buns, then the burger, then some marinara sauce straight out of the jar, then some fresh basil!
