Quinoa side dish
Was looking for a different side starch dish and lo and behold in my pantry was a COSTCO big bag of quinoa and a recipe on the back of the bag --an nice healthy starch alternative as its 100% whole grain.
Here's a quick Quinoa lesson --- Quinoa grains contain essential amino acids like lysine and good quantities of calcium, phosphorus, and iron.Quinoa grains are in general cooked the same way as rice keen-wa
and can be used in a wide range of dishes. It is pronounced

1T Vegetable oil
1/2 c chopped onion
2 carrots, peeled and chopped
1 c quinoa , RINSED
2 c vegetable broth
1/4 c fresh parsley,chopped
2/3 c chopped walnuts- I didn't use them
In oil -saute the onion about 5 min til translucent, then add carrot and saute 3 more min
Add in quinoa--cool shot huh with it pouring through the air!!
Add your broth and bring to a boil, lower to simmer and cover and cook for 15 min til tender and fluffy
