Kentucky Derby Pie
This past weekend we flew to Boston to see my Mom for Mothers Day and on Saturday it was also the Kentucky Derby -- now because we flew with carry on only there was no room for a fancy hat and while we were at the Cape waiting for my sisters to arrive I saw Mom adding silk flowers to her summer beach hat. I decided to get in on the fun and found some straw in their garage that had come off a tulip plant Mom had received for Easter --I couldn't resist so grabbed some flowers outside past their prime and stuffed it in the straw on my head like 'Mother Nature'. Shortly after Linda arrived and added some silk flowers and Kerri arrived along with Alice and they sported the baby's brimmed hats! All in all it was fun.
We sipped mint juleps -placed small wagers ( I won with Animal Kingdom) -before you get excited it was pure luck as we drew horse names! Then for dessert we had Kentucky Bourbon Pie --it was FABULOUS easy to throw together with mostly ingredients you may already have --if you don't have Bourbon --get a nip of it from the liquor store as you only need 2T. Sorry in advance I thought I had taken a pre picture of pie in shell and then remembered to take the serving picture after we had started consuming! I found this recipe on a Southern Food site --it called for making the crust from scratch but we just used a pie shell and added the filling--turned out great!

This is Beaumont Inn's Pastry Chef, Cathy Nichols, version of our regional classic pie.
•Ingredients for the filling:
•1/2 cup butter, unsalted, melted and cooled
•2 eggs
•1 cup sugar
•1/2 cup all-purpose flour
•1 cup semisweet chocolate chips
•1 1/2 cups chopped pecans
•2 tablespoons Kentucky Bourbon
Beat eggs with cooled butter.
Add flour & sugar. Beat until mixed well.
Gently fold in pecans, chocolate & bourbon.
Add mixture to pie shell.
Bake at 350° for about 30 minutes, or until set.
Serve with fresh whipped cream.
Not a perfect picture as we already started eating! But the whip cream is fresh....
oops sorry taken after everyone was served...I won't say who enjoyed the leftovers!
