Seasons Best Artichoke Tapenade

This is a brand new recipe from Pampered Chef in their Spring 2011 Seasons Best®.  -- I loved it because it came together so quickly --could be made ahead -- I already had most of the ingredients in the house and its only 90 calories per serving!!I honestly think it would be quite nice served on top of Chicken or Fish as well.
1 lemon
1 can (14 oz or 398 mL) artichoke hearts in water
1/4 cup (50 mL) loosely packed fresh parsley
1 garlic clove, peeled
1/2 cup (125 mL) pitted green olives
1 tbsp (15 mL) capers
5 tbsp (75 mL) olive oil

Toasted Baguette Slices (optional) or crackers or sliced fresh baguette
Zest lemon to measure 1/2 tsp. Juice lemon to measure 1 tbsp juice. Drain artichokes and pat dry using paper towels.
Then in the bowl with blade in place of the NEW FABULOUS  Manual Food Processor® from Pampered Chef combine parsley, garlic, lemon zest, juice, artichokes, olives, capers and oil. (In other words its a dump recipe with everything going into one bowl--how simple!!) Cover and pump handle to process to desired consistency, removing lid and scraping down sides of bowl as necessary

Serve with Toasted Baguette Slices, crackers or baguette bread slices.
Makes about 2 cups or 10 servings -- I took it into work and it was gone in a heartbeat!
