Foccacia Waffle Pizza !!!

OK did the title peak your interest!! Rachael Ray did a whole week of recipes using your waffle maker--everything from making brownies in it to corn bread mixture etc. I had bought a fresh pizza dough and then didn't end up using it  over the weekend and finally realized since it was rising in the fridge it had to be used. Please note I ended up dividing it into 4 portions as my waffle make is a rectangular one and not the traditional square ones.  This was totally yummy and I would definitely make this again--the best part was it was ready in minutes as opposed to waiting 30+ minutes for one to cook in oven--plus I loved the crispy waffle texture. I just used jarred sauce and cheese to top it with!

**please not there was another recipe where she put her sauce and cheese into the inside of dough and folded and sealed it then cooked --this DID NOT work well with my waffle maker style--perhaps with more surface space of a square waffle griddle it may work but frankly was a melted cheese and leaking sauce disaster and my head of cleaning aka Kevin was not happy!! He did like the focaccia pizza version :)**

•1 round pizza dough, cut into 2 pieces ( as I said cut mine into 4)

•Extra virgin olive oil (EVOO), for rubbing the dough

•2 tablespoons rosemary, chopped

•2 tablespoons thyme, chopped

•1 tablespoon oregano, chopped

•Salt and pepper

To make the waffles, pre-heat the waffle maker to medium-high heat.


Roll out ( I always just pull my pizza dough into shape)  both halves of the pizza dough until they are about the size of the waffle maker.

Rub the dough with EVOO and sprinkle rosemary, thyme, oregano, salt and pepper on both sides.

Lay the seasoned dough into the waffle maker, close the top and cook for 4 minutes. or iuntil the waffle make beeps that it is done.

After cooked I topped it with sauce

Then cheese and the heat basically melted it and we ate!!
