Acqua al 2 Carpaccio di Salmone - my way...
Acqua al 2 had opened its 3rd location in DC in the Eastern Market area. We first went back in 2006 in their Florence location which was fabulous we were so excited when they opened here! The photo below is from the Florence visit with our favorite waiter who is now a co-owner at the DC location!
One of the appetizers or FREDDI is called Carpaccio di Salmone. It is delicious! We have had this 3 times now there and wanted to try to recreate it --I was pleased with the results but ALAS forgot to take a picture and we head eaten the whole thing!! So here is the picture of the ingredients and I will walk you through the assembly....then just picture it in your mind --a pile of dressed arugala or spring mix then 'frosted with a layer of smoked salmon and garnished with capers/green peppercorns and halved cherry tomatoes around the plates edge!
Sliced smoked salmon (buy a good quality)
Package of arugula (or spring mix if you can't find it)
green peppercorns (or capers) about 1-2T
1-2 T lemon juice
1-2 T olive oil
5 cherry tomatoes sliced
Toss together the arugula, lemon juice and olive oil and mound on a chilled dinner size or serving plate.
Layer the smoked salmon in multiple layers over the salad mix like a topping or frosting.
Sprinkle green peppercorns or capers over the top
On the edge of the plate place the cut tomatoes -cut size down --dig in and serve --makes enough for 2-3 people to share!
