Wegmans Kung Pao Chicken Lettuce Wraps
This recipe came in a Wegmans email and was absolutely delicious! we will make them again soon.
- 1 Tbsp Wegmans Organic Extra Virgin Olive Oil
- 1 red sweet pepper, cored, seeded, 1/4-inch dice
- 1 bunch green onions, trimmed, white parts chopped, green parts thinly sliced, divided
- 1/4 tsp ground Wegmans Garlic Slices Grinder
- 1/2 tsp Wegmans Organic Ginger Stir-In Paste
- 3/4 tsp salt
- 1 pkg (1 lb) Wegmans Ground Chicken
- 1/2 cup Wegmans Kung Pao Sauce
- 8 leaves Wegmans Organic Green Leaf Lettuce
- Wegmans Salted Party Peanuts, crushed, for garnish
- Heat oil in large sauté pan on HIGH until oil faintly smokes. Add peppers, chopped green onions, garlic, ginger, and salt. Cook, stirring, 1 min.
- Add chicken. Cook, stirring to break up chicken, about 5 min until cooked through.
- Add sauce and sliced green onions; cook, stirring, 30 sec. Remove from heat.
- Arrange lettuce leaves on serving platter; divide chicken mixture evenly on leaves. Garnish with peanuts.
- Chef Tip: • For more heat, add chopped red Fresno peppers. • Serve with brown rice.
