Spaghetti Squash --a great alternative to pasta
Spaghetti squash is a great and easy alternative to pasta -- you can either microwave it or bake --you can then top it with either spaghetti sauce and meatballs (see previous recipe) or just sprinkle cheese! It can be stored at room temp for a month.
To Bake
Pierce the whole shell several times with a large fork or knife and place in baking dish. Cut in half then place cut side down.
Cook squash in preheated 375F oven approximately 1 hour or until flesh is tender. Then flip it over remove the seeds with a spoon and shred it with fork.

OR to Microwave
Cut squash in half lengthwise; remove seeds. Place squash cut sides up in a microwave dish with 1/4 cup water. Cover with plastic wrap and cook on high for 10 to 12 minutes, depending on size of squash. Add more cooking time if necessary. Let stand covered, for 5 minutes.
With fork comb or shred out the strands.
