Ham & Swiss Cheese Casserole My Mom' s Recipe

  Ham &Swiss Cheese Casserole (Mom's)

So the weather has started to turn much cooler and fall like and I wanted a quick easy meal on a weeknight --my mom used to make this -it freezes well also --I lightened it up from the original recipe with low fat / fat free and whole wheat pasta -Enjoy!!

4 T butter                                                                                            
     1/4  cup           Onion -- chopped
     1/3  cup           Pepper,Bell,Large -- chopped ( I used a yellow and green but red would be great as well)
   1      tablespoon    Flour,All-Purpose
   1      teaspoon      Salt
   8      ounces        elbow macaroni -- uncooked --(I used whole wheat)
   3 1/2  cups          milk (fat free milk)
   1 1/2  cups          ham -- (about 1/2# slice from deli)
   1      cup           Swiss Cheese -- (8oz sliced)
   1      cup           Sour Cream (fat free)

In a large skillet melt butter and then saute peppers and onions until soft.

Stir in the flour and salt --Be sure to cook the flour for about 1-2 minutes so that it gets the flavors and doesn't taste pasty.

Add your elbow and the milk, stir it up (it looks weird with the milk but the pasta will absorb it all)

Cover and bring to a boil.

Reduce heat to simmer for about 15 min covered.

Meanwhile cube ham and slice cheese.

Now add ham to pasta mixture. Stir it in and let it cook on simmer another minute or so.

Then add swiss cheese -- I kind of just layer it over the top and then stir it through to melt

Now add sour cream in and stir through again to heat. This is really a yummy and easy meal -Enjoy!
