Salmon with Pesto and Fresh Parmesan

This recipe is quick and elegant -and yes I would serve it to company!

Ingredients
Salmon Fillets
1 1/2 T pesto per fillet (mine is my frozen ones blogged about earlier)
Parmigiano Cheese

I microwaved the pesto for 30 seconds to defrost it and then just smeared the pesto on top of the salmon - as you can see go about 1/4" from edges and about 1/4# thick as well.
*HINT make sure to use a pan with edges as oil from pesto will run off salmon*
Now bake them for 15 minutes in a 425 oven. Then remove and grate parm cheese over them over them as shown in the action shot below!!
And here is another angle of action shot!
Then bake in under broil til melted or at 425 for about another 2-3 minutes.
This is the complete dinner with Broiled Tomatoes with cheese and Roasted Brussel Sprouts.
