Best Broccoli Cheese Soup
Another great recipe from Dan at Mantitlement.com it was perfect for a rainy day. I added about 1 T of fresh lemon juice. We halved this recipe as well.
4 T butter
1/2 c diced onion
6 heaping cups broccoli florets (about 2 heads with large stem removed)
1 c sliced carrots
1 T chopped garlic
1/2 t salt
1 t pepper
1/4 c flour
6 cups chicken stock
2 1/2 c shredded cheddar cheese
1/4 c heavy cream (optional) - we used it
pinch cayenne pepper
Instructions
- Melt butter in a pot or Dutch oven, cook the onion until softened.
- Add broccoli and carrots and cook until the broccoli is bright green.
- Add garlic, season with salt and pepper, then stir in flour.
- Pour in chicken stock, bring to a boil, then simmer until vegetables are tender.
- Blend the soup to your preferred consistency.
- Whisk in the cheese until melted.
- Stir in heavy cream and cayenne pepper if using, then adjust seasoning if needed.
- Serve immediately.
