Best Broccoli Cheese Soup

 Another great recipe from Dan at Mantitlement.com it was perfect for a rainy day. I added about 1 T of fresh lemon juice. We halved this recipe as well.



4 T butter

1/2 c diced onion

 6 heaping cups broccoli florets (about 2 heads with large stem removed)

1 c sliced carrots

1 T chopped garlic

1/2 t salt

1 t pepper

1/4 c flour

6 cups chicken stock

2 1/2 c shredded cheddar cheese

1/4 c heavy cream (optional) - we used it

pinch cayenne pepper 

Instructions

  1. Melt butter in a pot or Dutch oven, cook the onion until softened.
  2. Add broccoli and carrots and cook until the broccoli is bright green.
  3. Add garlic, season with salt and pepper, then stir in flour.
  4. Pour in chicken stock, bring to a boil, then simmer until vegetables are tender.
  5. Blend the soup to your preferred consistency.
  6. Whisk in the cheese until melted.
  7. Stir in heavy cream and cayenne pepper if using, then adjust seasoning if needed.
  8. Serve immediately.
