Sweet Potato Casserole

 This is an old favorite and I apologize for the pics in advance ---but it is soooo good and we have been making it for decades. Because we were traveling I actually made the potato mixture ahead and froze it. The streusel topping was also made ahead and frozen separately. Turned out great! No your eyes are not deceiving you - the casserole dish is half sweet potato ~ half  stuffing!



3 cups cooked, mashed sweet potatoes

1/2 cup white sugar

1/3 cup milk

2 beaten eggs

1/2 teas salt

1 teas vanilla

Mix together and pour into a 9x9 baker

 

Top with:

1 cup brown sugar

1/2 cup flour

3/4 cup chopped pecans

1/2 cup coconut

1/2 cup melted butter

 

Bake at 350 for 40 minutes.  Makes 6-8 servings
