Roasted Lobster Tails

From Wegmans Menu magazine we served it over cream of celery risotto and we did not finish with the butter as suggested but rather a slice lemon halved that roasted on same pan as lobster.
4 ( 5-6 oz each) Cold water Lobster tails
2 T Wegmans Organic basting oil
S/P
Lemon Halved
Chopped parsley garnish 

  1. Preheat oven to 450 degrees. Cut lobster tails in half lengthwise. Loosen meat from shell, allowing smaller tail end to remain attached. Drizzle lobster meat with basting oil; season with salt and pepper. Place shell-side down on baking sheet.
     
  2. Bake 7-10 min, until internal temp reaches 145 degrees (check by inserting thermometer halfway into thickest part of meat). Remove meat from shells before serving.
     
Chef Tips
Before serving, dollop lobster meat with Wegmans Shallot Thyme Finishing Butter.
