Roasted Lobster Tails
From Wegmans Menu magazine we served it over cream of celery risotto and we did not finish with the butter as suggested but rather a slice lemon halved that roasted on same pan as lobster.
4 ( 5-6 oz each) Cold water Lobster tails
2 T Wegmans Organic basting oil
S/P
Lemon Halved
Chopped parsley garnish
- Preheat oven to 450 degrees. Cut lobster tails in half lengthwise. Loosen meat from shell, allowing smaller tail end to remain attached. Drizzle lobster meat with basting oil; season with salt and pepper. Place shell-side down on baking sheet.
- Bake 7-10 min, until internal temp reaches 145 degrees (check by inserting thermometer halfway into thickest part of meat). Remove meat from shells before serving.
