Eggs in Hell by Mario Batali at THE CHEW

So one of my new passions has been to DVR and then watch back the new show THE CHEW -- they started out rocky but have now got into a great groove with lots of new recipes and ideas daily! So one weekend morning recently I saw this recipe and decided to give it a whirl. We liked it a lot!! You can kick up the level of spice as well


Ingredients
EVOO
Marinara Sauce (I just used canned)
Onion --thinly sliced
Jalapeno pepper - chopped and seeded ( I used red bell as that was all I had on hand and it was frozen!)
Tabasco sauce to kick it up!
Eggs
Crusty Bread which I toasted  (leftover)
Fresh Basil and Parm Cheese
 First I sauted up my sliced red pepper and onion in EVOO until tender
 Added in my marinara sauce (canned -sorry Mario!)
 A little Tabasco hot sauce to kick it up!
 Placed my eggs into the simmering sauce (can used a large serving spoon to lower them in)
 Put the glass lid on the pan and simmer for about 5 minutes until eggs set to desired doneness
 These weren't quite done yet--see the white is still opaque
 OK now your toasted bread on plate then top with sauce and egg

 top with shredded parmesan and slice basil!!!
 Once again company worthy!
