El Jefe Salad
This popped up on Instagram from Wegmans. You can supplement a protein as well. It was really delicious - I was shocked that we both had seconds!

10 oz chopped romaine
3 oz Organic Crumbled Plain Feta Cheese (we prefer the block in brine and crumbled it)
7 1/2 oz organic canned whole kernel corn, drained, rinsed
7 1/2 oz canned organic black beans, drained, rinsed
1 whole avocado, pitted, peeled, 1/2-inch dice
1 whole organic red bell pepper, cored, seeded, 1/4-inch dice
1/4 oz organic chopped cilantro
1/4 cup lime vinaigrette (Wegmans brand)
salt & pepper, to taste
Add romaine, cheese, corn, beans, avocado, peppers, cilantro, and vinaigrette to large bowl; season with salt and pepper. Toss to combine.
PRO TIP • Additional toppings could include pickled red onions, sliced radishes, and tortilla strips. • Canned corn can be replaced with fresh or frozen corn.
