Apricot Granola Yogurt Bark

Saw this on The Chew by Carla Hall - we only froze it for 2 hours --was great and a great way to have a yogurt snack -- will be perfect this summer! If you find it too hard let it sit out at room temp


  • 2 1/2 cups greek yogurt
  • 1/4 cup honey
  • 1 1/2 cups store-bought granola
  • 2/3 cup dried apricots (roughly chopped)
  • Prepare a baking sheet with wax paper. Using an offset spatula, spread the yogurt until 1/4-inch thick. Drizzle with honey and sprinkle with granola and apricots. Freeze until firm about 3-4 hours. Break into pieces and enjoy!
  • Tip: Use your favorite granola, nut and fruit toppings to sprinkle on top of your yogurt bark! Perfect on-the-go snack!
