New Idea for Salad Caprese!
Traditionally this is served with sliced tomatoes, sliced mozarella and basil--drizzled with EVOO or balsamic or both--this is just a different version I took to a cookout last weekend at Lake friends Bob and Cathe's home --it was great with hamburgers and hotdogs -- but also can be an appetizer. Package of Small Tomatoes (golf ball size)
1 Ball Fresh Mozarella (Ovaline size)
Fresh Basil
EVOO
Salt
First I cored all the tomatoes and had them on serving plate with a lip/edge to it.
Then I sliced down about 3/4 of the way through the tomato
Tear basil leaves into about 1" size and slice mozarella into about the same size as well.
I stuffed each tomato with the basil and mozarealla simultaneously
Drizzle with EVOO and salt --sorry the photo is a bit blurry I was taking the pic of me drizzling myselfand then forgot to take a final pic!
