Hungry Girl Low Fat and Calorie Cake

Saw this recipe on Rachael Ray show Lisa Lillien, aka "Hungry Girl" on October 15th.  I was inspired to try it out and decided to make it for a work pot-luck the next day.

  Lisa explained by preparing the cake per the box instructions with egg and oil each slice could be 250 calories with 10 grams of fat. By adding only one ingredient to the cake mix - diet soda each slice has only 170 calories and 3.5 grams of fat!

She also suggested adding orange soda to make the cake taste like orange cake, but you could also use cream soda, raspberry soda, club soda, depending on the flavor you want to achieve! I want to try a diet rootbeer with chocolate cake mix next!

Ingredients:

Cake Mix
12 oz Diet Soda

Mix together the cake mix and 12oz diet soda --it kinda a bubbly consistency as you mix it so no worries. Prep pan and bake per instructions.
OK in hindsight next time will not make it a layer cake but rather a tube or bundt one. Even with letting it cool I found it was splitting as I assembled it --so of course I tried to 'cover my sins' with confectionery sugar! Funny enough despite its bad looks it was a huge hit at work --didn't last long at all...LOL I felt I proved once again that I am a cook not a baker!
