Salsa Chutney Chicken to Welcome Back our Kiwi Friend
Sorry can't remember where we initially got this recipe but it is very simple - made with items you can have in your pantry - except green onions. Serve over couscous or rice.
4 chicken breasts ( or 2 costco packs of tenderloins)
EVOO
1 jar salsa
1 jar chutney
1 bunch green onions, sliced
rice or couscous - prepared
First you take two friends that have know each other almost a decade! Wow ladies does that make you feel old --Paige just returned from a year abroad post college grad in New Zealand --she came by to visit and stayed for dinner! Welcome back Paige!

First I cut up my chicken into pieces so that it will cook quicker and easier for serving and lunch leftovers!!
Then brown it in a nonstick skillet with a little EVOO.
Once browned add the salsa and chutney to the chicken--easy peasy!!!

Cover the pan and simmer for 10 minutes --note green onions on side to top with.
OK on nice large serving plate --place bed of couscous -- top with chicken mixture - and sprinkle with green onions and serve --yummy!!
