FALL is coming!! ITALIAN SAUSAGE STUFFED BUTTERNUT SQUASH

 ITALIAN SAUSAGE STUFFED BUTTERNUT SQUASH


  3              small  squash, butternut -- HALVED LENGTHWISE
  1              pound  italian sausage links
  1              large  onion -- chopped
  1              clove  garlic -- chopped
  8             slices  bread -- cut 1" squares
  2                     egg -- beaten
  2        tablespoons  parsley


In trying to speed up the cooking process I microwaved the whole squash in the microwave for about 20 minutes --be sure to prick skin after it starts to soften!


SLICE SQUASH LENGTHWISE AND REMOVE SEEDS FROM SQUASH.

 PLACE CUTSIDE DOWN ON GREASED BAKING PAN.   BAKE AT 350 FOR 50 MIN TIL EASILY PIERCED WITH A FORK.


Chop one lartge onion--love the food chopped it makes it all such quick work!

MEANWHILE REMOVE SAUSAGE FROM CASING

ADD THE GARLIC


AND FRY WITH ONION AND GARLIC TIL DONE.

ADD BREAD,

ADD PARSLEY AND EGGS (stir in eggs after you get the bread sausage mixture blended so that the eggs dont scramble on you!!

Will look like this



SPOON INTO SQUASH ( I used a large scoop to make the work easier)

BAKE ANOTHER 15 MIN TIL TOP IS GOLDEN.

MAKE 6 SERVINGS AS MAIN DISH

NOTES : SOMETIMES I JUST USE 1 LARGE SQUASH AND SCALE DOWN RECIPE.    ALSO CAN BE MADE AHEAD STOP AFTER SPOONING MIXTURE INTO SQUASH, REFRIDGE  AND REHEAT  WHEN READY
