Jerk Chicken Thighs served with Arugula Peach Salad

This meal and Wegman's recipe was a suggestion from my friend Terry Coulter (aka Martha Stewart protegee and Master Gardener - and oh by the way OR RN -yes she is VERY talented and soon to be Grandmother Meme )

Commentary -- ok so we liked this recipe -- next serve chicken on side -although Kevin liked it on top -- but def next time cut green beans, peaches and chicken into bite size pieces --very nice summer meal --especially for the heat --would be a great lunch !

SERVES 4 ACTIVE TIME: 25 min MARINATE TIME: 2 hour

oops do you see the missing ingredient--( red/bermuda onion :)

1 lb boneless skinless chicken thighs
1/2 of a 10 oz jar Tropical Pepper Co. Island Jerk Seasoning (please note Wegman's didn't have this brand --sold out-- so used Grace Jerk Marinade--will try the other next time)
Preheat grill on MEDIUM-HIGH 10 min.

  1. Coat chicken well with jerk seasoning (use gloves). Cover and marinate 2 hours.
  2. Sear chicken on grill 2-3 min, until it has changed color one-quarter of the way up from bottom. Turn over; sear 1-2 min. Reduce heat to MEDIUM; close lid.
  3. Grill chicken 15-20 min, or until internal temp reaches 165 degrees; check by inserting thermometer halfway into thickest part of chicken. Transfer to clean platter; set aside.

Arugula Peach Salad

SERVES 4 ACTIVE TIME: 20 min

1 pkg (8 oz) Food You Feel Good About Cleaned & Cut Mixed Beans
1 pkg (5 oz clamshell) Food You Feel Good About Baby Arugula
1 cup organic grape tomatoes, sliced in half diagonally
1/4 medium red onion, peeled, thinly sliced
1 peach, wedged
Juice of one fresh lemon (2-3 Tbsp)
3 Tbsp Wegmans Basting Oil (google recipe if you don't have this)
3 Tbsp Wegmans Extra-Virgin Olive Oil
1/2 tsp salt

  1. Microwave beans per pkg directions. Remove from pkg; transfer to bowl of ice water 2 min. Drain well.
  2. Combine beans, arugula, tomatoes, onion, and peaches in large bowl.
  3. Whisk together lemon juice, basting oil, olive oil, and salt in small bowl. Toss with salad.

Calories: 220 Nutrition Info: Each serving (2 3/4 cups) contains 220 calories, 11 g carbohydrate, (2 g fiber), 3 g protein, 20 g fat, (3 g saturated fat), 0 mg cholesterol, and 310 mg sodium.
