Banana Bread Donuts

 Not sure where I saw this recipe but it really was very good and a fun shape - naturally we added chocolate chips! I didn't end up adding the glaze at the end -kids ate them plain.



Cooking spray 

1 cup (120 g.) all-purpose flour 
1 tsp. baking powder 
1 tsp. ground cinnamon 
1/2 tsp. kosher salt 
1/4 tsp. baking soda 
1 large egg
1/2 cup (107 g.) packed light brown sugar 
4 Tbsp. unsalted butter, melted, cooled 
1 tsp. pure vanilla extract 
1 cup mashed banana (from about 2 ripe bananas) 
2 Tbsp. sour cream 

MAPL E GLAZE 
1 1/4 cups (141 g.) confectioners’ sugar 
2 Tbsp. maple syrup 
2 Tbsp. milk, plus more as needed 
Finely chopped toasted walnuts, for serving 

Step 1 
Arrange racks in upper and lower thirds of oven; preheat to 350°. Grease 2 (6-cavity) donut pans with cooking spray. 

Step 2 
In a medium bowl, whisk flour, baking powder, cinnamon, salt, and baking soda. 

Step 3 
In a large bowl, whisk egg, brown sugar, butter, and vanilla. Add banana and sour cream and whisk until combined. Add dry ingredients and whisk until just combined. 

Step 4 
Spoon batter into prepared wells, filling each to just below the center ring. 

Step 5 
Bake donuts until firm to the touch and edges are golden, 12 to 14 minutes. 

Step 6 
Transfer pans to wire racks and let cool for 5 minutes. Remove donuts from pans, transfer to wire racks, and let cool for 5 minutes more 

MAPLE GLAZE
Step 1
In a medium bowl, combine sugar, syrup, and milk until smooth. Add more milk, 1 tsp. at a time, if needed to thin glaze to make it easily dippable. 

Step 2 
Dip tops of donuts into glaze, then return to wire racks. Top with walnuts (if using)
