Chicken Mushroom Marsala - my way!

OK so the item that was getting ready to spoil was an extra large package of Baby Bella Mushrooms from Costco -hence tonight's partly made up recipe --the Chives and Thyme are from our herb garden!!


4 Chicken Breasts
Pan Sear Flour
S/P
Olive Oil
1/2 c Chicken Broth --note frozen in ice cube trays!
1 c Marsala wine
Green onions-sliced
1/2 red bermuda onion- chopped
8+ oz package baby bella mushrooms -cut into quarters
Fresh Thyme 6 sprigs
handful of Fresh Chives-chopped

Cut up chicken breasts into smaller pieces strips / dust with pan sear flour and S/P then brown up in olive oil and remove from pan.


Top with Fresh Thyme--leave on stem the leaves with fall off as it cooks then remove stems before serving


Prep vegetables


Saute mushrooms and red onions til soft


Add in 6 ice cubes of chicken broth and marsala and chicken --simmer over low heat for 10 min.


Top with your chopped green onions and chives!


Normally I serve this over egg noodles or mashed potatoes or angel hair but had leftover sourdough bread --so we slice it and then layered Chicken Marsala over --it was FABULOUS and may become a new way for us to serve this!
